Matzo Brei

Some friends celebrate Passover and always look for new ways to cook with Matzo. A classic dish is Matzo Brei is ideal for a perfect breakfast or brunch. Matzo is tossed with eggs and gently cooked until just done. This humble yet delicious egg dish can be served as a savory or a sweet one, which I enjoy the most. I drizzle it with pure maple syrup and berries for a Passover version of French Toast.


Ingredients for Matzo Brei:


4 large eggs

2 sheets matzo

2 tablespoons milk

2 tablespoons butter

1/2 teaspoon vanilla

Serve with maple syrup and berries

Run the matzo under the water faucet until wet, not soggy. Transfer the wet matzo to a plate.


Whisk the eggs, milk , and vanilla.


Melt the butter in a non-stick pan. Break up the matzo and add to the pan—Cook for a few minutes, coating in the butter.


Add the eggs to the matzo. Gently fold together until the eggs are set but still slightly wet looking. Serve with syrup and berries.


It's ready! Matzo Brei is so easy to prepare and delicious. I think it's the perfect way to welcome spring.
