Summer Corn Salad

When the summer corn starts flowing we can't seem to get enough of it. Usually, we have it grilled or steamed but it's also great in salads. Mixed with tomatoes and avocados it becomes the perfect light lunch or ideal side for anything you have cooking on the grill. Give this a try and I know you'll love it!


Ingredients for Summer Corn Salad:


4 ears fresh corn

1/3 cup chopped red onion

1 cup grape tomatoes, halved lengthwise

1 avocado diced

1/2-1 jalapeno, seeded and chopped

a small handful of cilantro leaves

kosher salt

Dressing:

4 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

2 teaspoons lime juice

1 teaspoon lime zest


Time-Saving Tip: The corn can be blanched a few hours in advance.

We're ready to cook.



Bring a pot of water to boil. Drop the corn in and cook for 1-2 minutes. Remove corn from water and when cool enough to handle cut off of the cob.


Combine the corn, tomatoes, pepper, and chopped onion. Add the dressing and then fold in the avocado and cilantro leaves; season with salt.


It's ready! This is such an easy and delicious salad to prepare. It's healthy and perfect for entertaining since it's great at room temperature. Once you try this salad I'm sure it will become a new favorite.
