Summer Nectarine Salad

Summer Nectarine Salad is a perfect contrast of sweet and salty. The juicy fresh nectarines mixed with parmesan cheese, and pistachios, cradled in the soft lettuce is ataste sensation in every bite. This salad goes particularly well with grilled beef or pork.


Ingredients for Summer Nectarine Salad:


Salad:

1 1/2 containers of butter lettuce or butter plus lettuce

2 large nectarines, sliced

1 endive, sliced

1/4 cup shaved parmesan

1/4 cup roasted and salted pistachios

Dressing:

6 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

1 shallot, chopped

1/8 teaspoon kosher salt

pinch of black pepper


Time-Saving Tips: The salad can be assembled earlier in the day and refrigerated undressed. The dressing can be prepared earlier in the day.

Let's start cooking.

Combine all of the dressing ingredients together in a small jar. Shake to combine well. If you don't have a jar just use a small bowl and a whisk or a fork. Set aside.

To assemble the salad, add the lettuce and endive to a bowl followed by the nectarines, cheese, onions, and pistachios; drizzle with some of the dressing.



It's ready! Drizzle the salad with some of the dressing and toss. It's delicious and beautiful. This is my new favorite salad of the week!
