Healthier Pumpkin Bread

I think I have a bit of a pumpkin obsession. It's only mid-October, and I have barely touched the service on all of the goodies that I hope to create. Next, I set out to make a Healthier Pumpkin Bread. It came out so delicious, and we loved it! It's a bit spicy with a crunch thanks to the pumpkin seed topping, and the best part is that there is no butter or oil since I slipped in a few spoonfuls of applesauce and lots of pumpkin puree.


Ingredients for Healthier Pumpkin Bread:


1 3/4 cups flour

1-15 ounce can pumpkin puree

1/4 cup applesauce

2 large eggs

1/3 cup buttermilk

1 1/2 teaspoons vanilla

1/2 cup sugar

1 1/2 teaspoons baking soda

1/2 teaspoon baking powder

1/2 teaspoon fine sea salt

1 1/2 teaspoons ground cinnamon

3/4 teaspoon ground ginger

1/4 teaspoon nutmeg

1/4 teaspoon allspice

3-4 tablespoon raw pumpkin seeds

1- 8 1/2 inch loaf pan


Time-Saving Tip: Measure out the ingredients and combine the dry ingredients a few hours before baking.

Combine the flour, baking soda, baking powder, spices, and salt in a bowl and set aside.


In a large bowl combine the pumpkin, eggs, sugar, milk, applesauce, and vanilla.


Add the dry ingredients to the wet and fold just until combined.


Transfer the batter to the baking pan, which has been greased and floured. Smooth the top and sprinkle with pumpkin seeds. Bake in a preheated 350-degree oven until a toothpick inserted comes out clean; about 25-30 minutes. Cool before slicing.
