Asian Style Broccoli

My husband loves broccoli and probably thinks I don't make it often enough. So I decided to prepare Asian Broccoli for dinner, and he loved it. It's a delicious side or perfect as a meatless entree.

Ingredients for Asian Style Broccoli:


2 pounds broccoli florets, cut into even pieces

1 8-ounce can sliced water chestnuts, drained

1 tablespoon chopped fresh ginger

4 cloves garlic, minced

1-2 hot red peppers, sliced

2 green onions, sliced

6 tablespoons water

2 tablespoons grapeseed oil

optional serving suggestions: sesame seeds for garnish and cooked white rice

Sauce:

1/3 cup water

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 teaspoon chili garlic sauce

1 teaspoon sesame oil

Combine all of the ingredients.


Time-Saving Tips: The broccoli, peppers, and scallions can be cut a few hours in advance of cooking them. The sauce can also be prepared a few hours in advance.

I like to have everything ready before I start cooking.


Heat the water and oil in a pan; add the broccoli. Saute over high heat until bright green. If the pan is dry, add a little more water.


Make a space in the middle of the broccoli and add the garlic. Saute until fragrant and stir in the peppers and water chestnuts.


Add the sauce and toss to combine. Cook for a minute or two until everything is well coated; toss in the green onions.


It's ready! The broccoli is crisp, and the added spice of the red pepper is delicious. I can almost eat the entire dish on my own it tastes so good. I know my husband could if I wasn't watching. If there are any leftovers, they taste great for lunch the next day.
