Balsamic Glazed Carrots

I'm loving these Balsamic Glazed Carrots. They're beautiful, delicious, easy to prepare, and are the perfect side to any roast, fish, or anything else. What else can I say? Give them a try.

Ingredients for Balsamic Glazed Carrots:

serves 4-6

2 pounds carrots, peeled and sliced into 1/2" pieces

4 tablespoons olive oil

5 cloves garlic, coarsely chopped

2 tablespoons balsamic vinegar

2 tablespoons chopped parsley

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

Time-Saving Tip: The carrots can be peeled and sliced in advance.

We're ready to cook.

Preheat the oven to 400-degrees. Combine the carrots, garlic, oil, salt, and pepper in a glass baking dish. Bake about 25-30 minutes.

Give the carrots a stir and return to the oven. Bake another 5-10 minutes until desired tenderness.

Remove from the oven and stir in the balsamic vinegar and then the parsley.
