BLT Frittata


When weekends roll around I like to have something a little different for breakfast. My favorite go-to is a frittata. They're perfect for breakfast, brunch, or even a light lunch. Eggs combined with whatever goodies inspire me in the refrigerator. Here, I created BLT Frittata which is loaded with bacon, sauteed shallots, a bit of cheese, spinach and topped with tomatoes. It was so delicious and made the perfect way to start my weekend.

Ingredients for BLT Frittata:


6 slices of bacon, cooked and broken into pieces

8 eggs

3/4 cup milk

3 tablespoons olive oil

2 handfuls baby spinach

2 shallots, chopped

1/3 cup grated swiss, gruyere, or cheddar cheese

1 tomato, sliced

kosher salt

black pepper


Time-Saving Tip: Cook the bacon a day in advance.

We're ready to cook.


Whisk the eggs and milk; set aside.


Preheat the oven to 450 degrees. Heat 2 teaspoons of oil in the pan. Add the shallots and season with salt and pepper. Saute 2-3 minutes until translucent. Add the bacon and then spinach. After a few seconds, the spinach will wilt.


Pour in the eggs and cheese. Use a spatula to push the eggs to the center allowing the uncooked eggs to spill over to the bottom of the pan. Cook the eggs until the edges start to firm up. Top with the sliced tomato and transfer the pan to a preheated 450 degree the oven. Cook until the eggs are set and remove from the oven. The eggs will continue cooking a bit more from the residual heat. Sprinkle the frittata with salt and pepper.


It's ready! BLT Frittata is so delicious. It's year another version of my favorite egg dish. It's just as yummy hot or room temperature and I even love leftovers the next day.
