Blueberry Ice Cream Sundae

Blueberry Ice Cream Sundae is my new favorite summer treat. Creamy vanilla ice cream draped in the syrupy-luscious berries is pure heaven. It's the perfect summertime dessert. Just whip up the blueberry sauce, chill, and pour it over your favorite ice cream. If you're like me, you will be eating this sauce with a spoon right out of the jar! It's that good.


Ingredients for Blueberry Ice Cream Sundae:


2 1/2 + 1/2 cup blueberries

1/2 cup maple syrup

1/2 cup water

2 teaspoons lemon juice

2 tablespoons cornstarch

vanilla ice cream


Time-Saving Tip: Prepare the sauce a day in advance; refrigerate. Bring to room temperature before serving.






This is all you need to make the blueberry sauce plus some water.








We're ready to cook!


Combine 2 1/2 cups blueberries, water, and maple syrup. Cook for 2-3 minutes. Add the cornstarch and lemon juice. Gently simmer while stirring to break up the cornstarch. Once thickened, turn off the heat and stir in the reserved 1/2 cup of blueberries; cool.


Scoop your favorite vanilla ice cream into a bowl or dish. And ladle on that luscious sauce!
