Broccoli with Garlic and Oil

What can I say? This is pretty much the perfect vegetable dish. It's easy to prepare, is full of flavor, and goes with everything. Everyone loves it whether it's part of a steak dinner, served alongside grilled fish or roasted chicken. I can even eat it as a main entree and cold leftovers the next day. So next time you're trying to decide on a veggie, go green.

Ingredients for Broccoli with Garlic and Oil:

2 pounds broccoli

5-6 cloves garlic

extra virgin olive oil

1/4-1/2 teaspoon crushed red pepper

kosher salt

Time-Saving Tips: The broccoli can be trimmed earlier in the day. The broccoli can also be blanched earlier in the day and cooled. If you blanch it earlier in the day run it under cold water and dry it before setting it aside.

Let's see what we need.

We're ready to cook.

Trim the broccoli and cut into equal-sized spheres.

Bring a pot of lightly salted water to a boil. Drop the broccoli in and cook for 2-3 minutes until desired crispness; drain.

Add the oil and garlic to a pan. Saute 30 seconds to a minute. Transfer the broccoli to the pan and saute on medium-high heat for a couple of minutes and add the crushed red pepper and season with salt. Toss until the broccoli is well coated in oil.

It's ready! This is so good that I could eat it every day. It's great for family dinners and to serve when entertaining. Once you try this easy recipe you'll be making it all of the time.

Enjoy!
