Chicken Sausage with Kale Bake

This is one of those meals that requires little effort and is satisfying and delicious. Chicken sausage and kale are sauteed separately and then combined and baked in the oven. Fresh, simple, and healthy ingredients make you feel like your taking good care of yourself while making a delicious meal.


Ingredients for Chicken Sausage with Kale Bake:


2 pounds sweet Chicken Sausage with Kale, plain chicken sausage works, too

2 teaspoons olive oil + 3 tablespoons olive oil

1 pound of kale

1 cup diced bell pepper, any color except green

3 shallots, chopped

1/2 cup chicken broth

kosher salt

black pepper


Time - Saving Tip: The vegetables can be chopped in advance.


Let's see what we need.

We're ready to cook.


Preheat the oven to 400 degrees. Saute the shallots and bell pepper in 3 tablespoons of oil for a minute. Add as much kale as you can fit in the pan. Toss over high heat for 30 seconds or so and as it starts to cook add more kale. Repeat until all of the kale is in the pan. Saute over high heat until it just starts to get tender, about 3 minutes and then transfer to a casserole dish.


In the same pan add 2 teaspoons of oil and the sausage. Saute turning frequently until the sausage is brown all over. Transfer the sausage to the casserole and place them on top of the kale. Pour in 1/2 cup of chicken broth. Cover the casserole with foil and bake for 15-20 minutes until the sausage is done and the kale is tender.


It's ready! This is a great recipe for so many reasons. It is easy and quick to prepare, it can easily be multiplied for large entertaining, leftovers are great, it's healthy and it's delicious!
