Coconut Rice

This coconut rice has been simmered in coconut milk and given an extra dose of coconut after cooking. With gentle accents of green onion, this is the ideal side for any kind of fish or meat. It is a favorite in our house. Give it a try and I think it will be a favorite in your house, too.

Ingredients for Coconut Rice:

2 cups of Basmati rice or any long grain rice, rinsed

1 can coconut milk plus enough water to measure 4 cups of liquid

2 tablespoons of Grapeseed oil or Canola oil

1/2 cup unsweetened shredded coconut

4 scallions, sliced

Kosher salt

Here is what we need.

Now let's get cooking!

Heat oil in a medium saucepan. Add rice and saute a couple of minutes until opaque.

Bring to a boil. Reduce heat and bring mixture to a simmer.

Cover. Cook until all of the liquid is absorbed.

Once all of the liquid has been absorbed turn off the heat and fluff the rice with a fork. Then add the scallions and shredded coconut. Gently fold to combine.

Season with salt according to your taste.
