Couscous with Grilled Vegetables


During the summer months, when I do a lot of grilling, I love my side dishes to be fresh tasting and easy to prepare. I especially love it when my leftovers are just as delicious as when I originally served them. One of my favorite go-to sides is Couscous with Grilled Vegetables. These golden granules are cooked with water or broth and then tossed with leftover Grilled Vegetables, lots of fresh basil, extra virgin olive oil, and lemon juice. I like to add a lot of veggies, so they are the start of the show. This side dish is great hot, room temperature or cold. I also love it on it's own for a light lunch.


Ingredients for Couscous with Grilled Vegetables:

Leftover Grilled Vegetables, cut into large chunks, 2-4 cups

2 cups couscous

2 1/2 cups broth or water

1 handful of fresh basil,torn into large pieces

1 lemon juiced

2 tablespoons extra virgin olive oil

kosher salt

black pepper


Time-Saving Tip: Prepare the side hours before serving.

Bring the broth or water to a boil and turn off the heat. Add the couscous and cover the pot for 5 minutes. Fluff the couscous with a fork.


Transfer the couscous to a bowl. Add the vegetables, basil, oil, and lemon juice. Season with salt and pepper and toss to combine.
