Easy Baked Cod with Tomatoes


Fish Friday is a breeze with Easy Baked Cod and Tomatoes. Lightly seasoned cod is baked surrounded by sweet cherry tomatoes and on top of sliced lemons. Once cooked, the delicately flavored fish is perfectly flavored and juicy. I love this healthy, simple, and delicious fish. It's a great meal to celebrate the weekend.


Ingredients for Easy Baked Cod and Tomatoes:


4 cod fillets, about 2 pounds

1 lemon sliced

12 ounces sweet cherry tomatoes

3 cloves garlic, minced + 3 tablespoons of olive oil, mixed

2 tablespoons olive oil

1/2 teaspoon Harissa Seasoning, divided

kosher salt

Add the tomatoes and 2 tablespoons of oil to a large baking dish; sprinkle with salt and toss. Place 4 slices of lemon on the plate and top each one with a fillet. Spread the fish with the garlic and oil mixture and sprinkle with salt.


Sprinkle each piece of fish with 1/8 teaspoon of the harissa seasoning. Transfer to a preheated 400-degree oven. Bake until the fish flakes with a fork. This will take about 8-12 minutes, depending on the thickness of the fillet.
