Easy Chicken Bake

When I was grocery shopping the other day, I caught a glimpse of a bag of stuffing, and even though I have never purchased a stuffing mix, I decided it would be perfect for dinner. I happily scooped it up along with some chicken and headed home. I sauteed onions, celery, and mushrooms and added them to my mix. I then seasoned the chicken, added it to the stuffing, and popped them in a hot oven, and before I knew it, we were eating crisp-smoky chicken with a delicious dressing. Dinner was delicious and perfect for a chilly evening.


Ingredients for Easy Chicken Bake:


8 chicken thighs

2 tablespoons olive oil

3 tablespoons butter plus extra for the baking dish

1 package Pepperidge Farm Herb Seasoned Classic Stuffing

2 1/2 cups low sodium chicken broth

8 ounces white mushrooms, stems removed and caps sliced

1 large onion, diced

kosher salt

black pepper


Seasoning Mix:

1 teaspoon smoked paprika

3/4 teaspoon onion powder

1/2 teaspoon garlic powder


Time-Saving Tip: Prepare the stuffing up to 2 hours in advance of baking.


Let's see what we need.

We're ready to cook.


Combine the spices and set aside.


Cook the butter, onion and celery until the onions are soft but not brown. Add the mushrooms and cook until the mushrooms are tender.


Pour the chicken broth into the veggies and bring to a boil. Turn off the heat and fold in the stuffing mix.

Grease a 9 x 13 baking dish with softened butter; add the stuffing.


Toss the chicken, oil, and seasoning together. Transfer the chicken on top of the stuffing; sprinkle with salt and pepper. Bake in a preheated 400-degree oven until the chicken is cooked, this will take 35-40 minutes.


It's ready! Easy Chicken Bake is delicious. The combination of crispy chicken and herb stuffing is a winner.

  • 8 chicken thighs

  • 2 1/2 cups low sodium chicken broth

  • 8 ounces white mushrooms, stems removed and caps sliced

  • 1 large onion, diced

  • Transfer the stuffing to a large baking dish and spread to cover the entire pan.

  • Toss the chicken, oil, and seasoning together. Then transfer the chicken on top of the stuffing; sprinkle with salt and pepper. Bake in a preheated 400-degree oven until the chicken is cooked, this will take 35-40 minutes.

I’m so happy to hear that you and Jay liked this dish. I agree with Jay; it reminds me of Thanksgiving too but a lot less work. My husband really liked this as well.

Best chicken dish, the first comment my husband Jay said was "wow is this Thanksgiving"!!! He loved the chicken bake and the taste of the thighs and the stuffing sealed the deal. Will definitely make again...Fran F
