Filet of Sole with Nectarine and Cucumber Salsa

I've been trying to prepare more fish these days. It's especially easy during the summer months since the fishermen in my life do not disappoint. Ironically, I did purchase this sole since it's not something that is around here. Perfect for a weeknight meal since it cooks so quickly I can have dinner on the table in no time at all. I've decided that the best way to cook these thin white filets is to season them and quickly saute. It produces juicy and flavorful fish, and when served with a delicious salsa, it is a beautiful and light summer meal.


Ingredients for Filet of Sole with Nectarine and Cucumber Salsa:


Fish:

2 pounds of filet of sole, fluke or flounder can also be used

3 tablespoons +2 tablespoons olive oil

1 teaspoon curry

1/2 teaspoon coriander

kosher salt


Nectarine and Cucumber Salsa:

1 cup finely diced nectarine

1 English cucumber, peeled, seeded and diced

1/4 cup finely diced red onion

1 jalapeno, seeded, and finely diced

2 tablespoons extra virgin olive oil

juice of 1 lime

4 teaspoons chopped fresh mint

1/2 teaspoon kosher salt

1/2 teaspoon black pepper


Time-Saving Tips: The salsa ingredients can be prepped in advance without the olive oil and lime juice; add the about 15 minutes before serving.

We're ready to cook.



Combine all of the salsa ingredients except for the lime juice and olive oil; add the last two ingredients about 15 minutes before serving.


I like to cut each fillet into 2 or 3 pieces depending on the size of the filet. It is easier to flip in the pan and makes a more beautiful presentation when serving. Coat the fish with the coriander, curry and three tablespoons of oil.


Add the 2 tablespoons of oil to a pan to bring to medium-high heat. Carefully place the fish, nice side down, into the pan. You should hear a sizzle. Flip over when the edges of the fish start to look cooked. Cook another 1-2 minutes, depending on the thickness of the fillets. Do not overcook or else the fish will be dry.


It's ready! Filet of Sole with Nectarine and Cucumber Salsa was an incredibly delicious and easy meal to prepare. It's perfect for any day of the week.

This reminds me that I haven't had sole in far too long, V. And what a beautiful treatment! Your nectarine/cucumber salsa would work for so many wonderful dishes!
