Friday Night Roast Chicken


There are few things more delicious on a Friday night than a roast chicken. When cooked right - juicy and not dry - it is the perfect way to wind down from a hectic week and to start off the weekend. If company is coming just pop a few of them in the oven and the smell of them roasting will make your guests swoon. All it requires is a dry rub and roasting until done.


Ingredients for Friday Night Roast Chicken:


1 4 - 4.25 - pound chicken

Dry Rub:

1 teaspoon Kosher salt

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon paprika

1/4 teaspoon dried thyme


Time-Saving Tip: Make the Dry Rub ahead of time. I also like to use a disposable pan on Friday night's so I start my weekend without scrubbing a pan.

Combine the Dry Rub ingredients. Using all of the rub, thoroughly coat the chicken. Be sure to put some under the skin as well. Once coated, let the chicken rest in the refrigerator for an hour. After the hour roast the chicken in a preheated 375-degree oven until done. This should take about an hour to an hour and fifteen minutes.


It's ready! It looks delicious and is delicious! The hardest part of this recipe is letting the chicken rest for at least 10 minutes after it's ready before carving. Serve with vegetables and rice or just a salad. No matter what the sides are this chicken is the star and you'll love it!
