Fried Pickles with Chipotle-Lime Sauce

When I peeked into my pantry this week, I noticed that the shelves aren't quite as full as they were a few weeks back. But the good news is that I still have a bunch of goodies that inspire me. I was especially excited when I spotted a jar of pickles and thought that they would make a yummy snack. So I created Fried Pickles with Chipotle-Lime Sauce. I dried the pickles and coated them in seasoned flour and buttermilk and fried them up. They turned out crisp, delicious, and my family loved them.


Ingredients for Fried Pickles with Chipotle-Lime Sauce:


Pickles:

1 jar of pickles, drained

1 cup of flour

3/4 teaspoon garlic powder

3/4 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne


Chipotle-Lime Sauce:

3/4 cup mayonnaise

1/2 cup sour cream

1 chipotle pepper, chopped

zest of 1 lime

1/2 lime juiced

Kosher salt

pepper


If you don't have the ingredients for the sauce, ranch dressing is a good stand-in.


Time-Saving Tip: Prepare the sauce a few hours in advance.


Let's see what we need.

We're ready to cook.


Combine all of the sauce ingredients together, except for the lime zest, in a small food processor. Process until just blended. Transfer the mixture to a bowl and stir in the lime zest; set aside.


Drain the pickles and transfer them to a paper-towel-lined sheet pan and let rest for 20 minutes to dry.


Combine the flour and spices.


Toss the pickles in flour, then dip in the buttermilk and let drip and then coat in the flour mixture again. Transfer the pickles to a parchment-lined sheet pan while completing the process.


Add about 1 1/2 inches of oil to the pot. Once hot, add a pickle if it is sizzling, add a few more, making sure not to crowd the pot. Cook for a few minutes, turning them as they cook. Once they are dark golden, transfer them to a rack on a foil-lined sheet pan.



It's ready! Fried Pickles with Chipotle-Lime Sauce is the perfect snack. The trick is to make sure the pickles are dry before you get started, and if they are, you will have the crispiest and most delicious snack.
