Frisee Salad with Marcona Almonds, Beets, and Blue Cheese


I just came up with a new delicious salad for the holiday season. Frisee Salad with Marcona Almonds, Beets, and Blue Cheese. Frisee lettuce and butter lettuce serve as the base, and then red beets, a sliced honey crisp apple, blue cheese, and Marcona almonds are added and then drizzled it with a maple-balsamic dressing. This salad is delicious, and it's packed with flavor and textures. It sparkles, which makes it perfect for the season.

Ingredients for Frisee Salad with Marcona Almonds, Beets, and Blue Cheese:


Salad:

5-ounces Butter Lettuce

1-2 bunches Frisee Lettuce

4 small cooked beets, diced

1 HoneyCrisp Apple cored and sliced

1/3 cup Marcona Almonds

1/3 cup crumbled blue cheese 1/4 cup chopped chives


Dressing:

3 tablespoons extra virgin olive oil

6 teaspoons lemon juice

2 teaspoons maple syrup

1 teaspoon balsamic vinegar

2 teaspoon Dijon mustard

3/4 teaspoon kosher salt

1/4 teaspoon black pepper


Time-Saving Tip: Prepare the salad up to 2 hours in advance; dress before serving.

Combine the dressing ingredients in a small jar. Shake well and set aside. If you don't have a small jar just mix dressing in a small bowl; set aside.


Add the lettuce to the bowl and arrange the beets and apples on top. Sprinkle with the cheese, almonds ad chives. Shake the salad dressing and drizzle it on top of the salad.
