Golden Chia Pudding with Mango




I love beautiful Golden Milk, its full of health benefits such as being an antioxidant and a mood booster, and it's also delicious. It's the milk of your choice simmered with turmeric, a pinch of black pepper, cinnamon, and in my case, a little ginger. The milk is warmed; the spices bloom. It's so comforting, and it occurred to me why not add it to my favorite pudding? So I've combined this warmed-spiced milk with chia seeds and even added mango for good measure and made the most delicious Golden Chia Pudding with Mango. It's a great way to start the day or even the perfect snack.



Ingredients for Golden Chia Pudding with Mango:


1/2 cup chia seeds

2 1/4 cups almond milk

1/2 cup pureed mango

4 teaspoons honey

1 1/4 teaspoon turmeric

1 cinnamon stick

1 teaspoon vanilla

1/4 teaspoon ginger

1 pinch of black pepper

1/2-1 cup finely diced mango

Time-Saving Tip: Prepare the pudding the day before serving.

We're ready to cook.



Add the milk, cinnamon stick, ginger, and turmeric to a small saucepan. Simmer for ten minutes until slightly reduced.


You should have two cups of liquid. If you have a little less, add a dash of milk and stir in the honey, set aside and cool.


Puree some mango to measure 1/2 cup.


Pour the milk mixture into a large bowl and whisk in the mango. Add the vanilla and chia seeds. Combine well and then transfer the mixture to jars or small containers and refrigerate overnight.


Once chilled top with finely diced mango and if you want a little whipped cream.
