Grilled Lemon-Herb Chicken


When done right grilled boneless chicken cutlets are the best. I like to quickly marinate the chicken in a mixture of olive oil, garlic, lemon, and herbs before grilling. Once cooked, the delicious and juicy chicken is perfect with any side and leftovers are just as good.


Ingredients for Lemon-Herb Chicken:

3-3 1/2 pounds thin-cut chicken cutlets

3/4 cup olive oil

2 lemons, juiced and zested

1/3 cup chopped parsley

1 tablespoon Dijon mustard

6 cloves garlic, minced

3/4 teaspoon kosher salt

1/2 teaspoon black pepper

Time-Saving Tip: The marinade can be prepared a few hours in advance.

We're ready to cook.


Combine all of the ingredients together except for the chicken; set aside.


Place the chicken in a glass baking dish and pour the marinade on top; combine well. Refrigerate and marinate for 20 minutes. Don't marinate for any longer because the acid in the lemon will start "cooking" the thin cutlet and they will get a weird texture.


Transfer the chicken to a preheated grill. Cook until grill marks appear and turn. Continue cooking until done. It only takes a few minutes on each side to cook.
