I love grilling, easy and flavorful meals during the summer. So when I had a hankering for pork, I created Grilled Pork Chops with Pineapple Salsa. I decided to brine the chops in pineapple juice, sliced jalapenos, and fresh rosemary. After a few hours, I dried the meat and coated them with a flavor rub and grilled them to perfection. I then topped it with my favorite Pineapple Salsa. The meat was so juicy and delicious, and each bite with the Salsa was the perfect combination of spice and sweet. This one's a winner, and I can't wait to make it again.
Ingredients for Grilled Pork Chops with Pineapple Salsa:
Pork Chops:
4 center cut pork chops with bone
2 - 6 ounces pineapple juice
1 large jalapeno, sliced
1 sprig rosemary
3 tablespoons grapeseed oil
Rub:
1 teaspoon smoked paprika
1 teaspoon kosher salt
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon dried rosemary
1/2 teaspoon black pepper
Pineapple Salsa:
1 1/2 cups diced pineapple
4 tablespoons finely chopped jalapeno
4 tablespoons finely chopped red onion
8 grape tomatoes, diced
juice of half of a lime
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
Time-Saving Tip: Prepare the meat marinade a few hours before using it. Dice the fruit and vegetables for the salsa a few hours in advance and store separately. Combine all of the ingredients before serving.

We're ready to cook.
Combine all of the salsa ingredients and give it a good stir. Let it rest for at least 10 minutes before serving.
Place the meat in a casserole; Pour the pineapple juice on top and sprinkle with the sliced peppers and rosemary. Cover and refrigerate for two hours. Turn the pork and refrigerate another two hours.
Dry the pork chops thoroughly. Rub the seasoning and oil all over the meat.
Place the pork chops on a preheated medium-hot grill. Turn when there are good grill marks. Continue cooking unit meat is done, or an instant-read thermometer reads 136-138 degrees. Let rest ten minutes before cutting.
