Grilled Sausage and Peppers


If you follow my blog, you know I love sausage and peppers. It's delicious. I make it all year round with variations, but for me, the summer is where this dish shines. With just a few simple ingredients and easy cooking, the rewards are boundless. In this version, I add perfectly grilled sausages to peppers and onions which have been sauteed in good olive and seasoned only with salt, pepper, and oregano. Don't be fooled by the ease of the recipe because as any Italian will tell you it's about the freshness of the ingredients. Sausage and peppers are the perfect meal to serve a crowd and taste great even if made a day in advance. Serve with some good rolls and your good to go.


Ingredients for Grilled Sausage and Peppers:

This recipe feeds a crowd. Feel free to cut it down.


5 pounds Italian Pork Sausages

1/4 cup extra virgin olive oil

6 bell peppers, seeded and sliced

3 cubanelle peppers, seeded and sliced

3-4 large onions, halved and sliced

3 cloves garlic, minced

1 teaspoon dried oregano

kosher salt

black pepper


Time-Saving Tips: All of the vegetables can be sliced in advance and stored separately in the refrigerator for a couple of days. The entire dish can be cooked in advance and reheated in the oven the next day.

Let's cook.



Add the onions and oil to a large pot; season with salt and pepper. Cook for a couple of minutes and then add the peppers and garlic. Give the mixture a good stir and mix in the oregano. Stir 1-2 minutes and turn off the heat and set aside.


Grill the sausages over medium-high heat until just done.



Let the sausages sit for 5-10 minutes and then quarter each sausage. Add the sausages and any juice to the pot of vegetables. Toss to combine and cook together until the vegetables are heated and vegetables are tender; this should take a couple of minutes.



It's ready! This is so good. Serve on its own with a salad and bread or make sandwiches. Either way, Sausage and Peppers is a winner in my book.
