Shrimp Scampi is one of those dishes that everyone loves. It's great when served over pasta or a nice loaf of crusty Italian bread to soak up all of the lemon - garlic juice. Though generally, this is an "inside" recipe I decided to create one for outside. Here I grilled large shrimp until just cooked and while hot tossed them in a mixture of olive oil, garlic, lemon, and parsley. This incredibly easy version is beyond delicious and so good for you. I've left out the butter so there is all of the deliciousness you'd expect from scampi without the calories. This recipe is a winner.
Ingredients for Grilled Shrimp Scampi:
1.5 pounds large Shrimp, 11-15 count, clean and tail left on
3 tablespoons olive oil + 2 teaspoons olive oil
4 teaspoons fresh lemon juice
2 teaspoons grated lemon peel
4 cloves garlic, chopped
1/4 chopped parsley
bamboo skewers, soaked in water for an hour
Time-Saving Tip: The shrimp can be peeled and cleaned a few hours before using and refrigerate. The sauce can be made ahead as well and left at room temperature.

Soak the chopped garlic in the lemon juice for about 30 minutes. Since the garlic will not be cooked the lemon juice will help to soften the flavor. In the meanwhile mix the lemon zest, parsley, and oil together; then stir in the garlic mixture.
Toss the shrimp with 3 tablespoons of olive oil. Thread 3 shrimp onto two parallel skewers at the same time. Continue the process until all the shrimp is used up.
Place the shrimp on a hot grill. Turn off when the shrimp just starts to turn pink. When the other side just barely turns pink, remove from the grill.
Remove the shrimp from the skewers and transfer to a bowl. Pour the sauce on top and toss.
It's ready! This looks amazing and is so delicious. The hot grilled shrimp tossed with the garlic-lemon sauce is as good as it gets. It's easy to make for a crowd since the recipe can easily be doubled or even tripled. Its everything you love about shrimp scampi only easy and good for you.
