Beets are popping up all over the place these days. They're starring in salads, sides, soups, and smoothies. The Instant Pot makes it easier than ever to cook these gems for your favorite recipe. Here's how I do it...
Ingredients for "Instant" Beets:
a bunch of medium - sized beets, greens cut off and beets scrubbed
1 1/4 cups water

Time-Saving Tip: You can trim and clean the beets in advance of cooking them. Cooked beets will keep for days in the refrigerator.

Let's cook the beets.
Pour water into the pot. Add the cleaned beets. They should be placed on a trivet or a rack. Set the pressure cooker for 10 minutes on High. Once done cooking do a quick release. When the beets are cool enough to handle, peel off the skin.
They're ready! The beets are perfectly cooked. They are ready to eat as is or in your favorite recipe.
