"Instant" Black Beans


I love making beans, but sometimes I want to make them, and the dried ones can't cooperate quite so quickly. That's when I grab my trusty Instant Pot, and before you know it, I'm digging into a bowl of glistening and perfectly cooked beans. To get started, I make my sofrito, which is a mixture of peppers, onions, tomatoes, and garlic. I throw some in my IP and street for a few minutes and then add the rest of my ingredients, and 45 minutes later, I'm a happy girl. It's a little longer than that with heating the pot, but you get the idea.



Ingredients for "Instant" Black Beans


Beans: 1 pound dried black beans 4 1/2 cups water 3/4 cup Sofrito, recipe below 2 tablespoons olive oil 1 bay leaf 3 tablespoons sherry kosher salt Sofrito: 1 large onion, halved and cut into chunks 1/2 red bell pepper, cut into pieces 1/2 green bell pepper, cut into pieces 2 Campari tomatoes, quartered 1/2 generous cup cilantro, leaves, and stems 4 cloves garlic You will need a pressure cooker for this recipe. To make the sofrito add the onions to the food processor and chop. Add the rest of the ingredients and process until nearly smooth and set aside.

Set the Instant Pot to 30 minutes on Saute. Once heated add the oil and 3/4 cup of the sofrito. Saute for 5 minutes and then add the water, salt, beans, and bay leaf.


Cook the bean mixture for 45 minutes on high and then do a natural release. Stir in the reserved sofrito, sherry, and 1 teaspoon of salt; give the mixture a good stir. Taste and add more salt if need.
