Kani Salad

I've been hearing so much about Kani Salad these days that I decided to make my own. Now I know why everyone is talking about it-it's so delicious! With just a few ingredients, imitation crab meat is transformed into the freshest and best salad of the summer. Along with cucumber, mayo, and a splash of hot sauce, this comes together in minutes. This homemade version is better than any I have had out, and I bet you will think so too! My family loved this salad.



Ingredients for Kani Salad:

8 ounces Kani, Imitation Crab, peeled into strips

1 English Cucumber

2 tablespoons Tobiko

1/2 cup Kewpie

3 tablespoons Mirin

2 teaspoons Sriracha


Time-Saving Tip: Prepare the dressing up to a few hours in advance.

We are ready to cook.



Peel and seed the cucumber. Slice it in half and julienne.


Combine Kewpie, Mirin, and Sriracha.


Combine the cucumber and Kani in a large bowl.


Add half of the dressing and toss if you would like a little more dressing-add some more. Gently fold in the tobiko.


It's ready! Homemade Kani Salad is a breeze to prepare and so delicious. It's especially perfect for a light lunch during the hot summer months.
