I love having turkey leftovers because they are so versatile. One of my favorite dishes to make with it is Curried Turkey. It is packed with vegetables and flavor. My family loves it. Give it a try and I bet your family will love it, too.
Ingredients for Leftover Curried Turkey:
Serves 4-5
*4 cups cubed turkey
1 cup sliced carrots
1-1/2 cups sliced celery
1 cup diced onions
3 cloves, minced garlic
2 teaspoons chopped ginger
3 teaspoons grapeseed oil
1 - 15 ounce can light coconut milk
2 large tomatoes or 3 small, seeded and chopped
5 teaspoons curry
1/2 teaspoon turmeric
1/8 teaspoon cayenne pepper
*1/2 - 1 cup turkey stock
2 tablespoons chopped cilantro or parsley
Kosher salt
black pepper
Serve with white rice, raita, and naan.
Leftover chicken and purchased chicken broth can be substituted.
Time-Saving Tip: The vegetables can be prepped earlier in the day.

It's time to cook.
Combine the oil, onions, celery, and carrots to the pan and cook until tender. Once tender, add the curry, cayenne, turmeric, ginger, garlic, and tomatoes. Season with salt and pepper. Saute for 2 minutes. Add the turkey and combine.
Add the coconut milk and turkey stock. Simmer until the sauce has thickened Sprinkle in the cilantro or parsley. Adjust seasoning.
It's ready! This meal comes together so quickly and is delicious. Feel free to double the recipe for a larger group. The curry also is great the next day for lunch.
