This spread is always a crowd-pleaser. The lemon, thyme, garlic and goat cheese makes a sophisticated and delicious appetizer. All of the flavors complement each other so well that it is impossible to not go back for more. It is an irresistible spread on water crackers but even better on crostini. This is one of my favorite appetizers to serve while entertaining.
Ingredients for Lemon and Herb Goat Cheese Spread:
One 10.5 ounce log of goat cheese, room temperature
2 teaspoons of grated lemon peel from 2 lemons
2 small cloves of garlic, put through garlic press
2 teaspoons of fresh thyme, chopped a couple of times
1/8 teaspoon coarse pepper
1/8 teaspoon Kosher salt

Time Saving Tip: Feel free to make the spread and topping a day in advance and store separately in the refrigerator. Just wrap the spread it in plastic wrap. Bring both to room temperature before serving.

In a small bowl, combine the grated lemon peel, pressed garlic, lightly chopped thyme, salt and pepper.
Add about 3/4 of the lemon-thyme mixture to the goat cheese and combine.
Shape into a disc roughly 4.5 inches by 4.5 inches. Store in the refrigerator covered in plastic wrap.
Add the oil to the lemon-thyme mixture.
Place the cheese on a platter when ready to serve. Pour the olive oil mixture on top of the cheese. It will dribble down the sides.
Add some crostini and a little thyme to decorate the platter. Looking beautiful!
