Lemon Rice


I love adding flavors to rice. One night I was trying to decide on a simple but different side dish and I came up with Lemon Rice. It's fresh tasting, light, and full of flavor. It goes great with fish, poultry, lamb or really anything else that you might be serving. It's also so pretty that t brightens up any plate.


Ingredients for Lemon Rice:


2 cups rice, rinsed until the water is clear

3 tablespoons unsalted butter

3/4 teaspoon turmeric

2 shallots, chopped

1 tablespoon fresh ginger

2 teaspoons lemon zest, from 2 lemons

1/4 cup fresh lemon juice

1 3/4 cups water

1 cup chicken broth

3 scallions sliced

kosher salt

pepper


Time-Saving Tip: All of the ingredients can be prepped a few hours before cooking the rice.

We're ready to cook.


Melt the butter in a large pot over low heat. Add the rice, shallots, and turmeric. Season with salt and saute for 3-4 minutes. Pour in the lemon juice. water, and chicken broth.


Bring to a boil. Reduce to a simmer and cover. Cook for about 10-15 minutes until water is absorbed.


Once the rice is cooked, fluff with a fork. Gently fold in lemon zest and ginger; season with more salt. Add the chopped scallions.


It's ready! It looks great and tastes really delicious. This rice really brightens up any meal. Serve with roasts, curries, or anything grilled. It's a winner.
