Lobster Boats

Perfectly dressed lobster salad spooned into tender endive leaves makes a wonderfully elegant and celebratory appetizer. It is so light and refreshing a great complement to the rest of any meal. The best part is that this appetizer can be made-ahead. Well, actually the lobster is the best part but the make ahead is a close second.

Ingredients for Lobster Boats:

enough filling for about 16 stuffed endive

1 cup cooked lobster, small dice

1/4 cup chopped celery

2 tablespoons chopped red bell pepper

1 tablespoon chopped parsley

3 tablespoons mayonnaise

1/2 teaspoon fresh lemon juice

1/4 teaspoon Dijon mustard

Kosher salt

black pepper

Time-Saving Tip: The salad can be made a few hours in advance. The endive leaves can also be filled a few hours in advance, covered with plastic wrap, and refrigerated.

Place the lobster in a bowl. Add the celery, red bell pepper, and parsley.

Fold the mayonnaise, mustard, and lemon juice into the lobster mixture. Season with salt and pepper. Using a spoon fill the endive leave with the salad.
