Magic Chicken

Winner-winner chicken dinner! Chicken tends to be my weeknight go-to meal, but it has to be juicy, delicious, and easy to prepare. This one is all of the above and is just as scrumptious when roasted in the oven or grilled. Don't be fooled by the ease of this dish. It's so delectable that it's perfect for entertaining, too. And why is this chicken magic? Because of the secret ingredient, of course.


Ingredients for Magic Chicken:


6 chicken legs

3 tablespoons olive oil

1 tablespoon kosher salt

1 tablespoon baking powder (no longer a secret)

1 teaspoon smoked paprika

3/4 teaspoon onion powder

3/4 teaspoon garlic powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon hot paprika

1/4 teaspoon dried thyme

Cooking spray


Time-Saving Tips: Mix all of the dried spices together in advance. The chicken can be marinated 2-4 hours in advance of cooking. Use a disposable pan so there is no clean-up.


If you decide to grill the chicken add a couple of more tablespoons of oil to the recipe.

Combine the salt, pepper, onion powder, garlic powder, smoked paprika, paprika, hot paprika, dried thyme, and baking powder in a small bowl. Add the oil and stir.


Place the chicken in a glass baking dish and coat well with the spice mixture. Do your best to evenly coat the chicken even try to get some of the rub under the skin. I like to use disposable gloves so my hands stay clean. Marinate the chicken for 2-4 hours in the refrigerator.


Coat the pan or pans with cooking spray. Add the chicken and bake in a preheated 425-degree oven. Depending on the size of the chicken pieces, it will take about 35-45 minutes until it's done. The skin will be crispy, and when poked with a fork, the juices will be clean.


It's ready! It looks delicious, and it is exquisite! It's crispy, full of flavor, and juicy which sounds perfect to me. This chicken is ideal for a weeknight meal and great for entertaining. It's so easy to prepare and is ideal for a crowd.
