Margarita Roast Chicken


I'm always trying to change up the flavors of our roast chicken. I figured Margaritas are always so tasty so why not bring those flavors to the meal. I doused the chicken in lime, orange, garlic, and tequila. It's fabulous. Of course, the flavors go together so well and it turns out that they are perfect for a roast chicken. Give it a try, you will love it.


Ingredients for Margarita Roast Chicken:


1 - 4 1/2 pound chicken

1/4 cup olive oil

1/4 cup orange juice

zest and juice 1 lime

1 tablespoon tequila

3-4 cloves garlic, minced

1/4 cup chopped cilantro

kosher salt

black pepper


Time-Saving Tips: The garlic, lime, and cilantro can be prepped a little earlier in the day. Use a disposable pan to roast the chicken so there is no clean-up after dinner.

We're ready to cook.


Preheat the oven to 400-degrees. Combine the garlic, cilantro, lime zest, lime juice, orange juice, and tequila in a small bowl.


Place the chicken in a 2-gallon baggie. Pour the marinade on top. Coat the chicken as thoroughly as possible. Place chicken and marinade in the pan. Roast for about an hour and fifteen minutes. Start checking for doneness at about 50 minutes.


It's ready! It looks so delicious and tastes delicious, too. Serve the juice from the pan alongside. This is really a yummy roast chicken.
