Matzo Bark with Caramel and Chocolate



Here is a great way to enjoy Matzo. It's chocolate bark with caramel and a matzo crust. It's delicious and kind of addictive. This is perfect for the Passover season and delicious enough to make all year round. It makes a great dessert snack or you can even fill up goodie bags to hand out to your guests. I've seen other versions of this recipe but mine is as easy as it gets. Come on and I'll show you my secret.


Ingredients for Matzo Bark with Caramel and Chocolate:


4-6 pieces of matzo

1 11-ounce bag of caramels (my secret)

1 10-ounce bag of bittersweet chocolate chips

1 cup pecan pieces


You will also need a sheet pan, parchment paper, and foil.


Time-Saving Tip: The bark keeps well and can be stored in the refrigerator for a week or more.


Let's see what we need.


We're ready to make the bark.


Line the sheet pan with foil and then put a piece of parchment paper over the foil. Then spread out a few pieces of matzo to cover up the paper. The matzo should be touching. You will need to use a knife to cut some smaller pieces of matzo to fill in the spaces.


Unwrap all of the caramel and place in a microwave-safe bowl. Put in the microwave on high for a total of two minutes. After a minute, stir the caramel and then return for the rest of the time. When it is all melted it will be very hot and bubbly. You need to move fairly quickly now...


Pour the melted caramel over the matzo and spread. You will need to move quickly because the caramel hardens fast.



After a couple of minutes, the caramel will have cooled down and will be firm. Give it a touch to see if it has reached this point. Your finger will not have any residue stuck to it.














Follow the same process to melt the chocolate. Microwave on high for 2 minutes. After 1 minute give the chips a stir and return to the microwave. After 2 minutes it will look like there are still some chips in the bowl. Ignore that and give it a good stir. The heat will melt the rest of the chocolate. Be careful not to overcook the chocolate or else it will harden.
