Mini Gem Salad with Gorgonzola Vinaigrette is the perfect example of one that doesn't need to be complicated to be delicious. Ingredients for Mini Gem Salad with Gorgonzola Vinaigrette:


Salad:

1 package of 6 Mini Gem Lettuce

1 cup grape tomatoes, halved

1/4 cup chopped chives


Vinaigrette:

1/3 cup olive oil

1/3 cup crumbled Gorgonzola

2 tablespoons red vinegar

2 teaspoons dijon mustard

1/8 teaspoon black pepper

1/8 teaspoon salt


Time-Saving Tips: Prepare the vinaigrette up to two hours before dressing the salad.
