It's the day after and all things seem to point to a turkey sandwich. But maybe your turkey already needs to be reinvented a bit. I love making Next Day Turkey Salad. It has some leftover turkey, celery, diced apple, and some celery. It has a light dressing and is really delicious. I like to make pita sandwiches out of it or sometimes I eat it straight out of the bowl. Give it a try and I'm sure it will become a regular in your house, too.
Ingredients for Next Day Turkey Salad:
makes about 1 quart
3 cups diced leftover turkey
1 apple, peeled, cored and diced
1/2 cup diced celery
2 tablespoons thinly sliced scallion
1 tablespoon dried cranberries
2/3 cup mayonnaise
1 teaspoon dijon mustard
1 teaspoon lemon juice
Kosher salt
pepper
Time-Saving Tip: This salad will last for a few days in the refrigerator.
Let's see what we need.
Now let's make the salad.
In order to make the dressing combine the mayonnaise, mustard, lemon juice, and some black pepper. Do not add any salt yet. Set aside.
Add the dressing to the diced turkey and combine. Then fold in the apple, celery, scallion, and cranberries. Taste and add more pepper and if needed salt.
It's ready! Doesn't it look delicious? The apple really adds a refreshing bite to this salad. Don't worry if you don't have any leftover turkey...it works just as well with leftover chicken.
