Next-Day Turkey Soup

I love turkey soup and look forward to having leftover turkey and homemade turkey stock. Next-Day Turkey Soup is so delicious and easy to prepare; you'll be wanting to make this all of the time. The luxurious stock is made even more delicious with sauteed carrots, parsnip, celery, leeks. After simmering and added the turkey lemon juice is added to brighten the mixture. Add the addition of noodles makes this soup perfect.


Ingredients for Next-Day Turkey Soup:


3 quarts Next-Day Slow cooker Turkey Stock

2-4 cups leftover diced turkey

3 tablespoons olive oil

3 carrots, peeled, halved lengthwise and sliced

3 stalks celery, sliced

1 small onion, diced

2 leeks, cleaned, halved and sliced

1 1/2 tablespoons lemon juice

1/4 chopped fresh parsley for garnish

1/2 teaspoon kosher salt

1/4 teaspoon black pepper


Time-Saving Tip: The soup can be prepared a few hours before serving and gently reheated.

Chop the vegetables and set aside. Cook the noodles according to the package directions and set them aside as well.


Add the vegetables and oil to a large pot; season with salt and pepper. Saute the vegetables for 4-5 minutes until tender without browning. Add the turkey and simmer until heated. Now you're ready to serve the soup, add some noodles to a bowl, place the soup on top and garnish with the parsley.
