Orange-Ginger Chia Pudding

Chia pudding is delicious for a healthy breakfast, snack or even dessert. The variations are endless. This version highlights two of my favorite ingredients, oranges, and ginger. The combination resulted in a bright and happy flavored pudding - perfect for spring!


Ingredients for Orange-Ginger Chia Pudding:


1/2 cup Chia Seeds

1 - 13.5 ounce can Coconut Milk

1 navel orange

zest of 1/2 an orange

juice of 1/2 an orange

4 tablespoon honey

1/2 teaspoon of ground ginger

keep the other half of orange for later

a small handful of crystallized ginger


Time-Saving Tip: These need to be made at least 8 hours in advance.


Let's see what we need.


We're ready to make some pudding!


You will need 2 cups of liquid. Start off by measuring the can of coconut milk to measure 2 cups. You will see that it is a bit short. Add the juice of half of 1/2 an orange and then enough water to reach 2 cups of liquid.


Pour the milk mixture into a larger bowl. Whisk in the orange zest and ground ginger until well combined. Mix in the chia seeds and then pour into individual serving dishes or a bowl. Cover and refrigerate for 8 hours or overnight.


It's ready! I like to garnish these with some chopped crystallized ginger and mini orange slices. I also give a squirt or fresh orange juice. This is so good. I love these, in fact, I think I am going to make more now so I can have them for breakfast tomorrow.
