Perfect Stuffed Peppers

I am a big fan of stuffed peppers. Though I rarely prepare them because they never seem to be at the forefront of my mind when planning meals. However, recently I was at the market and saw these beautiful peppers and decided to make them for dinner. I stuffed the peppers with sauteed ground beef, onions, yellow squash, rice, and three kinds of paprika. I topped them with a little sauce and baked them in the oven. They were delicious, comforting, and perfect for a chilly evening.


Ingredients for Perfect Stuffed Peppers:

serves 4 - 5


6 bell peppers

1 pound ground beef

2 tablespoons plus 1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 yellow squash, diced

3 tablespoons chopped parsley

1 1/2 cups cooked white rice

1 teaspoon sweet paprika

1/2 teaspoon hot paprika

1/2 teaspoon smoked paprika

Kosher salt

ground black pepper

1-8 ounce can tomato sauce mixed with 2 tablespoons water

Time-Saving Tip: The peppers can be prepared earlier in the day and refrigerated. Take them out of the refrigerator about 30 minutes before baking.

Here are the beautiful peppers that I found at the market. Cut the tops off of the peppers and scoop out the seeds. Lightly grease a glass baking dish with a tablespoon of oil. Place the peppers cut side up in the dish. Drizzle them with a total of 1 1/2 teaspoons of olive oil and then season with salt and pepper. Set aside.


Preheat the oven to 350-degrees. Add 2 tablespoons of oil to a medium sized pan. Cook the meat, onions, squash, paprikas, and 1/2 teaspoon kosher salt until the meat is no longer pink. Stir in the garlic and cook for about a minute. Add the rice and parsley and combine. Fill up the peppers the filling. Once filled cover each pepper with the sauce and water mixture. You will have extra sauce.


Add 3 tablespoons of water to the bottom of the baking dish. Cover with foil. Bake for about 30 minutes until peppers have softened and the filling is nice and hot.


It's ready! This is comfort food at its best. So delicious and easy to make. Serve with a salad and some nice bread and you have a perfect meal.
