I love chips and salsa. It always seems to be the perfect snack. Though sometimes I want something different from the typical tomato version. I decided to add fresh pineapple to black beans and it's delicious. I also added some chopped jalapeno peppers, lime juice, and a few other goodies. The salsa is great with chips, grilled meat, fish or even with quesadillas.
Ingredients for Pineapple and Black Bean Salsa:
1 -29 ounce can Black Beans, rinsed and drained
1 1/2 cups diced fresh pineapple
3 tablespoons chopped jalapeno peppers, about 2-3 peppers
3/4 cup diced red bell pepper, about 1/2 pepper
3/4 cup chopped white onion
3 tablespoons lime juice
2 tablespoons chopped cilantro
1 tablespoon lime zest
3/4 teaspoon cumin
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
Time-Saving Tips: All of the vegetables can be prepped earlier in the day. The salsa can be made a day in advance and refrigerated.

Add the beans, peppers, cilantro, onions, pineapple, lime juice, add lime zest to a bowl and gently combine. Then add the salt, cumin, and black pepper. Gently fold together and add more salt as needed.
It's ready! It looks great and tastes delicious. This is a healthy after-school snack and perfect for entertaining.
