Pomegranate Brussel Sprouts

Roasted brussel sprouts are so good. In just a few simple steps they come out of the oven caramelized and bursting with flavor. I wanted to keep the simplicity of this method while adding some fun. So here are the most delicious Pomegranate Brussel Sprouts. They are roasted in a hot oven and then are quickly tossed with some Pomegranate molasses, pomegranate seeds, walnuts, and a drizzle of lemon juice. The result is a beautiful vegetable worthy of any celebration.


Ingredients for Pomegranate Brussel Sprouts:

8 servings


2 pounds brussel sprouts, cleaned, dried and trimmed

2 tablespoons olive oil

1 tablespoon water

Kosher salt

black pepper

1 tablespoon Pomegranate Molasses

1 tablespoon fresh lemon juice

3 tablespoons pomegranate seeds

2 tablespoons chopped walnuts


Time-Saving Tip: The brussel sprouts can be prepped earlier in the day so the are ready when you are ready to cook.

Now let's cook.


Preheat the oven to 425-degrees. Clean, dry and trim the brussel sprouts. Place them in a glass baking pan. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper and toss with 2 tablespoons of olive oil and 1 tablespoon of water. Place in oven.


Roast until the sprouts are tender crips and have started to char. Take them out of the oven and drizzle with molasses, lemon juice, pomegranate seeds and walnuts. Adjust seasoning if necessary.
