Pumpkin Beer Cheese


'Tis the season for pumpkin everything. I love pumpkin and am all too happy to add it to just about everything. So I decided to whip up a batch of Pumpkin Beer Cheese to ring in the weekend. I combined cheddar Jack cheese, beer, pumpkin, and a few other things and melted everything together. Happy Weekend!


Ingredients for Pumpkin Beer Cheese:


3 tablespoons unsalted butter

3 tablespoons flour

2 cloves garlic, grated or pressed

1-12 ounce can/ bottle of beer, room temperature

8 ounces cheddar jack, grated

1/4 cup + 2 tablespoons pureed pumpkin

2 tablespoons Dijon mustard

1 teaspoon Worcestershire sauce


Time-Saving Tip: Grate the cheese up to a day in advance.

We're ready to cook.



Melt the butter in a medium-sized pan. Whisk in the flour and continue whisking until well combined - about a minute. Add the garlic and cook for another minute.


Add the pumpkin, mustard, and Worcestershire sauce. Whisk some more until blended.


Pour in the beer and whisk until smooth. Continue cooking and stirring until the mixture thickens.


Add the cheese a handful at a time. Continue cooking for about 5 minutes until smooth and slightly bubbly; season with salt and pepper.


It's ready! Pumpkin Beer Cheese is crazy good! My husband and sons couldn't stop dipping into the cheese and before I knew it my bowl filled with pumpkin yum disappeared.
