Rice Cooker Lemon-Parmesan Rice



I know I have admitted a little while back for being a bit challenged when it comes to cooking rice the old fashioned way on the stove. I'm here to tell you that nothing has changed! Truthfully, I haven't tried to improve this shaky cooking skill of mine because I don't have to thanks to my favorite small kitchen appliance. Rice Cooker Lemon-Parmesan Rice is my latest rice creation. You know the drill, all I have to do is measure, and the rice cooker does the work. When the rice is ready, I add scrumptious ingredients like lemon and parmesan cheese, and I have a wonderfully delicious and easy side dish that pairs well with just about anything.


Ingredients for Rice Cooker Lemon-Parmesan Rice:


2 cups Jasmine rice, rinsed until water runs clear

1 cup chicken broth

water

2 tablespoons chopped fresh parsley

1 lemon zested

1/4 cup parmesan cheese

kosher salt

black pepper


When using a rice cooker, always use the measuring cup and spatula that comes with the cooker.


Time-Saving Tip: The rice can be cooked a few hours in advance and kept on the warm setting. Add the rest of the ingredients right before serving.

Now, back to cooking.

Add the rinsed rice to the cooker and using the rice cooker measuring cup, measure one cup of chicken broth and add enough water to reach the 2 cup line in the pot. My rice cooker has different measures for different types of rice. The measure on the far right is white rice.


Once cooked fluff the rice and fold in the rest of the ingredients; season with salt and pepper.


It's ready! Rice Cooker Lemon-Parmesan Rice is so easy and delicious. With such a few ingredients, plain rice becomes a fancy side. If you don't have a rice cooker, do yourself a favor and buy one, it will change your life in the kitchen.
