Roasted Broccoli with Tahini Dressing

Delicious. Delicious. Delicious. I can eat this Roasted - Broccoli with Tahini Dressing as a meal. The caramelized broccoli and garlic dressed in the tahini dressing is a game changer. Give it a try and I bet you will love it.

Ingredients for Roasted Broccoli with Tahini Dressing:

1 large broccoli crown, sliced into pieces

3 large cloves garlic, sliced

2 tablespoons olive oil

Kosher salt

coarse pepper

Tahini Dressing:

1 1/2 tablespoons tahini

2 tablespoons room temperature water

5 tablespoons plain Greek yogurt

1 small garlic clove, minced

2 tablespoons + 1 teaspoon fresh lemon juice

1/4 teaspoon Kosher salt

1/8 teaspoon black pepper

dash of cayenne pepper

Time-Saving Tips: The broccoli and garlic can both be prepped ahead of time. The dressing can also be made an hour or two before.

Now let's cook.

Preheat the oven to 450-degrees. Toss the cut-up broccoli, garlic and 2 tablespoons of olive oil. Spread the mixture onto to a parchment lined sheet pan. The parchment paper makes clean up a breeze. Season with salt and pepper. Place in the oven and roast for 15 minutes. Then turn all of the broccoli over for another five minutes.

While the broccoli is cooking you can make the dressing. I like to make dressings in jars. It makes mixing a breeze and it is ready to store. Add all of the dressing ingredients to the jar. Shake it up and it is ready.

It's ready! You can toss the dressing in with the broccoli or just drizzle on top. This dish is addictive.
