Roasted Mushrooms


I love mushrooms and add them to everything from eggs, sauces to casseroles. Though they're also delicious on their own especially when roasted and flavored with garlic, parsley and a splash of sherry. The roasting intensifies the flavor of the mushrooms and is incredibly delicious. I like to serve them as a side to any beef or even roast chicken.


Ingredients for Roasted Mushrooms:

3 pounds white mushrooms, stemmed

4 tablespoons olive oil

1 tablespoon sherry

1/2 cup chopped parsley

2 cloves garlic, chopped

kosher salt

pepper


Time-Saving Tip: The mushrooms can be cleaned and cut a few hours in advance.

We're ready to cook.


Depending on the size of the mushrooms half or quarter them.


Place the mushrooms on a foil-lined sheet pan. Drizzle the mushrooms with the oil and toss. Roast them in a preheated 500-degree oven for 10 minutes and turn them over. After 30 minutes stir in the sherry and cook for another 4 minutes. Once they're removed from the oven generously season and toss in the garlic and parsley; season with salt and pepper.
