Ingredients for Roasted Sweet Dumpling Squash:
2 Sweet Dumpling Squash
2 tablespoons olive oil
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon Kosher salt
1/8 teaspoon black pepper
2 pinches nutmeg
a pinch or 2 of cayenne pepper
Time-Saving Tip: You can cut the squash ahead of time so it is ready when you are ready.
Let's see what we need.
Now let's cook.
Preheat the oven to 425-degrees. Be sure to wash the squash very well because the skin is edible. Then cut the squash in half and scoop out the seeds. Then slice each half into 1/4" - 1/2" slices. Just try and cut them all the same size so they cook at the same rate.
Place the squash in a bowl. Add the rest of the ingredients and toss. Then place on a parchment paper lined cookie sheet. Roast for about 20 minutes and then turn all of the pieces over. Bake another 10-15 minutes until tender. The timing depends on how thick the slices have been cut.
It's ready! The squash looks great. This recipe for Roasted Sweet Dumpling Squash is easy and delicious. Sounds perfect to me.
