Roasted Sweet Potatoes

Sometimes Roasted Sweet Potatoes is all you need. Diced into bite-sized pieces and sprinkled with seasonings like smoked paprika, a little cayenne, and then roasted in a hot oven. Each bite has a crisp, flavorful outside and creamy sweet inside. These are a perfect side dish or a great healthy nibble any time of the day.


Ingredients for Roasted Sweet Potatoes:


3 pounds sweet potatoes, peeled and diced into " 1/2" pieces

3 tablespoons grapeseed oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne


Time-Saving Tip: Dice the potatoes and toss with the oil and spices up to an hour before roasting.

Peel and dice the potatoes in 1/2" pieces. Toss them with the oil and the seasonings.


Transfer the sweet potatoes to a parchment-lined sheet pan. Transfer to a preheated 425-degree oven and bake for 20 minutes. Turn the potatoes and increase the oven temperature to 450. When golden and crisp, the potatoes are ready.
