Salmon Steaks with Mango Salsa

It's hard not to love salmon. It's packed with nutrients and tastes great whichever way it's prepared. I make it pretty often so I try to vary it as much as I can. This time I reached for steaks instead of the fillets. I quickly seared them in the pan and then popped them in the oven for a couple of minutes. I topped them with refreshing mango salsa. The salsa was just perfect with the salmon. Dinner was delicious and came together it's perfect for a weeknight dinner.

Ingredients for Salmon Steaks with Mango Salsa:

2 -4 salmon steaks

grapeseed oil

2 mangos, peeled and diced

1/2 cup red bell pepper, diced

1 tablespoon chopped jalapeno chopped, 1-2 depending on the size

1/4 cup chopped red onion

2 tablespoons chopped cilantro

kosher salt

black pepper

Time-Saving Tip: The salsa can be prepared 1-2 hours before cooking the salmon.

Let's see what we need.

Let's cook.

Add the diced mango to a bowl.

Add the red bell pepper, red onion, jalapeno, cilantro, and lime juice. Stir and sprinkle with some salt. Set aside.

Preheat oven to 400 degrees. Rinse and dry fish very well with paper towels. Sprinkle each side with a little salt and pepper. Add enough canola oil to the oven proof pan to lightly coat the surface. Heat the pan to medium-high. Once heated add the fish... it will splatter.  After about 1-2 minutes the steaks should be a golden brown. Using a spatula flip them over. After cooking for about 2 minutes or so place the pan in the oven. Cook for about 3-5 minutes or until done. Don't overcook the fish or else it will be dry. Keep in mind that thanks to the heat there is some residual cooking after removing the fish from the oven.

It's ready! It looks amazing. Just top each steak with a spoonful of salsa. Be sure to pass around the rest of the salsa because it is so good that everyone will want more. This meal is easy!

Enjoy!
