It's incredible how anything tastes so delicious when grilled. I created Sweet Potato Kebabs with Honey Lime Glaze one day, and the rest is as they say history. Midway thru cooking the potatoes, I brushed them with a flavorful glaze made up of a little butter, honey, and lime juice. This sauce added just the right about of tart and sweet to the already sweet potatoes and was a delicious side dish.
Ingredients for Sweet Potato Kebabs with Honey Lime Glaze:
3 pounds sweet potatoes peeled, and cut into 1 to 1 1/2 inch equal sized cubes
2 tablespoons grapeseed oil
kosher salt
black pepper
wooden skewers, soaked in water 3-4 hours
Glaze:
4 tablespoons butter
3 tablespoons honey
2 tablespoons lime juice
2 teaspoons soy sauce
Time-Saving Tip: Prepare the glaze a few hours in advance.

Use the microwave to melt the ingredients for the glaze; combine well.
Season the sweet potato chunks with salt and pepper. Toss with the oil, a few tablespoons of water and cover with plastic wrap. Microwave until tender enough to insert a skewer, but not fully cooked. Thread all of the potatoes on the skewers.
Grill on medium heat until the bottom starts to take on color. Turn and begin brushing wit the glaze. Continue rotating and adding sauce until the potatoes are cooked and slightly charred.
