Tarragon Lemon Roast Chicken


I never tire of eating roast chicken. Though I do like seasoning it differently from time to time. I decided a mix of tarragon and lemon would be a great combination. Boy was I right! The combination of lemon and the licorice flavored tarragon filled my kitchen with the most incredible aroma while the chicken was roasting. The only thing better was the taste. Give this a try and you will be so glad that you did.


Ingredients for Tarragon Lemon Roast Chicken:


1 - 4 1/2 pound chicken

1/4 cup olive oil

zest and juice of 1 lemon

2 tablespoons of chopped fresh tarragon

1 teaspoon Dijon mustard

3-4 cloves garlic, minced

kosher salt

black pepper


Time-Saving Tips: The garlic, lemon juice, lemon zest, tarragon, and oil can be prepped a little earlier in the day. Use a disposable pan to roast the chicken so there is no clean-up after dinner.

We're ready to cook.


Preheat the oven to 375-degrees. Combine the garlic, lemon juice, lemon zest, tarragon, and oil in a small bowl.


Place the chicken in the pan and coat as thoroughly as possible with the marinade. Even try to tuck a little under the skin; season with salt and pepper. Roast for about an hour and fifteen minutes. Start checking for doneness at about 50 minutes.


It's ready! It looks so delicious and tastes delicious, too. Serve the juice from the pan alongside. This is really a yummy roast chicken.
