The Essential Veggie Sandwich

I love sandwiches loaded with lots of veggies. While it may be a nod to my former vegetarian days, it's more likely that they are delicious. Ideally, there are a bunch of layers, and cheese is somehow involved. The Essential Veggie Sandwich is all that and more. I start with creamy avocado and end with lemon herbed goat cheese. In between are crispy cucumbers, carrots, watercress, tomatoes, red onion, and a drizzle of dressing all nestled between whole grain bread. This sandwich is so delicious that I'm pretty sure you will love it as much as I do.


Ingredients for The Essential Veggie Sandwich:

3-4 sandwiches, depending on how thick you make them


Sandwich:

4 slices multigrain bread

2 handfuls of watercress

1 -2 tomatoes, sliced

1 1/2 cups shredded carrots

1/2 English cucumber. thinly sliced

1/2 red onion thinly sliced

2 avocados mashed with 1/4 teaspoon lemon juice and salt

kosher salt

black pepper

Herb Goat Cheese:

One 10.5 ounce log of goat cheese, room temperature

2 teaspoons of grated lemon peel from 2 lemons

2 small cloves of garlic, put through a garlic press

2 teaspoons of fresh thyme, chopped a couple of times

1/8 teaspoon coarse pepper

1/8 teaspoon Kosher salt

5 tablespoons extra virgin olive oil


Time-Saving Tip: Prepare the Herb Goat Cheese a few hours in advance. Bring to room temperature before preparing the sandwich.

In a small bowl, combine the grated lemon peel, pressed garlic, lightly chopped thyme, salt, and pepper. Add about 3/4 of the lemon-thyme mixture to the goat cheese and combine. Combine the remaining herbs mixture with the olive oil and set aside.





I like to have all of my ingredients ready to go before I assemble the sandwich.








Place two pieces of bread on a flat surface and spread with some of the mashed avocados. Top with tomato slices, watercress, cucumbers, and season with salt and pepper. Add carrots, and onions, drizzle with some of the olive oil herb mixture. Spread another piece of bread with the goat cheese spread and top the sandwich.


It's ready! The Essential Veggie Sandwich is full of flavor and packed with healthy ingredients. This is the perfect lunchtime meal.
